Recipes: Tagliatelle alla Romagnola
Ingredients for 4 people:
- 4 eggs
- 400 gr. of flour
- Salt as needed
Preparation:
Place the flour on a chopping board, make a hole in the middle and put the eggs and salt, mix it all with the hands. When the mixture is hard and compact, roll the mixture with the rolling pin until it becomes a thin layer.
Let dry and then cut. Boil in abundant boiling and salted water and flavour with meat sauce or butter and Parmesan cheese.
