Recipes: Piadina Romagnola 
Ingredients for 4/5 people:
- 1 kg of flour
- 4 gr of baking soda
- 300 gr of lard (o half a glass of extra virgin oil)
- un pinch of salt
Preparation:
Mix all the ingredients, adding slowly some water to form rather hard dough. If you prefer, you can replace water with milk or white dry wine. Roll the dough with the rolling pin and cook the piadina on the typical terracotta dish on a high flame (the piadina cooks quickly).
With a fork crush the bubbles that form on the surface of piadina during the cooking and flip it over to cook it on the other side.
Serve the piadina hot with cold cuts and soft cheeses.
