Recipes: Passatelli in broth (Noodles in broth) 
Ingredients for 4 people:
- Parmesan cheese
- dry bread
- four eggs
- nutmeg (according to taste)
Preparation:
Grate the dry bread, the cheese and nutmeg. Place everything on pastry board: mix it all with the eggs in order to obtain a hard and compact mixture. Take a mould (the potato masher is perfect) and press on the mixture, so that the passatelli noodles come out from the holes like many "vermicelli" or small worms.
Cut at the base with a knife and place them on the board. Cover them with a cloth while waiting for the beef or chicken broth to boil then pour into boiling broth. Strain them after a few minutes of cooking and serve. Season with a sprinkling of cheese.
